ONÉSIMO GONZÁLEZ BIOJÓ

Viche Mano de Buey is a type of alcoholic beverage that originated from the northeastern part of the San Andrés de Tumaco Nariño cove in the southern Pacific. It is produced in the Soledad Curay hamlet, which belongs to the community council "ACAPA" zone 4. In 1852, Mr. Tomas González, Gregoria Quiñones, and their children migrated to this place from the town of Barbacoas Nariño due to family conflicts. Once they settled in this jungle space on the shores of the vast Pacific Ocean, the González Quiñones family began the process of colonizing the territory while taking advantage of the benefits of nature with its fauna and flora.

The elders recounted that there were individuals in the family with wisdom and skill in the production of viche and the construction of stills, which facilitated the development of this process. The activity was exclusively carried out by women, among whom Gregoria Quiñones and Concepción González Quiñones stood out.

Viche "Mano de Buey" embodies the knowledge and struggles of its ancestors, reflecting the family's pride in preserving and transmitting their ancestral knowledge to future generations.

Type of sugarcane: POJ 2878, planted since 1935.

Type of milling: Traditional cold-pressed sugarcane technique, done by hand and with animal traction, in a wooden mill. Maximum extraction 72 hours after cutting the cane.

Fermentation time: 3 to 4 days.

Type of distillation: Single distillation of sugarcane fermentation, no water added.

Type of still: Stainless steel and copper still.

Alcohol content: 40%

Mano de Buey is a light viche that innovates in the distillation technique while preserving ancestral practices.

Smooth on the palate with saline notes from the Nariño sea 

Smell: Woody, robust, and enveloping aroma reminiscent of the light jungle surrounding the hut where it is produced.

Taste: Its sweet notes have citrus and saline shades from the Nariño sea, with a short and smooth aftertaste on the palate.
